Cherries and Cream Salad
2 cans (1 lb. each) red water packed cherries
1 can (13 1/2 oz.) pineapple tidbits
1 can (3 1/2 oz.) flaked coconut
1 cup miniature marshmallows
3/4 cup powdered sugar
1/4 tsp. salt
2 cups sour cream
Drain fruit, saving the juice for other uses. Combine the fruit with coconut, marshmallows, sugar and salt. Fold in sour cream carefully, turn into a bowl and refrigerate overnight. Garnish with salad greens.
Red dessert cherries may be used instead of water packed, however omit the powdered sugar. Serves 8.
