Cherry-Apricot Crumble Bars

Serves 1 Dozen Bars | Prep Time About 20 minutes | Cook Time About 1 hour total

Ingredients

3 cups quick-cooking oats
1 cup flour
1 cup sugar
1/2 tsp baking soda
1/4 tsp salt
1/8 tsp ground nutmeg
3/4 cut butter, melted
1 (21 oz.) can cherry pie filling
2/3 cup chopped dried apricots


Preheat the oven to 350 F


Line a 13 x 9 inch baking pan with foil, extending the ends of the foil over the edges of the pan to approximately 2 inches.


In a large bowl, combine the oats, flour, sugar, baking soda, salt, and nutmeg


Add the melted butter


Toss to combine


Reserve 1 cup of the crumble mixture


Press the remaining mixture into the bottom of the prepared pan.


Bake until set, 12 to 14 minutes


In a small bowl, combine the pie filling and the apricots


Gently spread the cherry mixture over the crust


Sprinkle with the reserved 1 cup of the crumble mixture


Bake until lightly browned and bubbly, about 30 to 35 minutes


Let cool completely on a wire rack


Remove from the pan by lifting the foil edges


Cut into squares to serve
