CHERRY-APRICOT CRUMBLE BARS

  • Preparation Time: About 20 minutes

Ingredients

  • 3 cups quick-cooking oats
  • 1 cup flour
  • 1 cup sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/8 tsp ground nutmeg
  • 3/4 cut butter, melted
  • 1 (21 oz.) can cherry pie filling
  • 2/3 cup chopped dried apricots

Directions

  • Preheat the oven to 350 F
  • Line a 13 x 9 inch baking pan with foil, extending the ends of the foil over the edges of the pan to approximately 2 inches.
  • In a large bowl, combine the oats, flour, sugar, baking soda, salt, and nutmeg
  • Add the melted butter
  • Toss to combine
  • Reserve 1 cup of the crumble mixture
  • Press the remaining mixture into the bottom of the prepared pan.
  • Bake until set, 12 to 14 minutes
  • In a small bowl, combine the pie filling and the apricots
  • Gently spread the cherry mixture over the crust
  • Sprinkle with the reserved 1 cup of the crumble mixture
  • Bake until lightly browned and bubbly, about 30 to 35 minutes
  • Let cool completely on a wire rack
  • Remove from the pan by lifting the foil edges
  • Cut into squares to serve
