Cherry Cheesecake Bars
1 package (17.5 oz size) sugar cookie mix, prepared as directed on package
1 package (8 oz each) cream cheese; softened
1-1/2 cups milk
2 tablespoons sugar
1/2 teaspoon vanilla
1 box (4 serving size) lemon instant pudding mix1 can (20 oz) cherry pie filling
Preheat oven to 375. Press cookie dough evenly into bottom of a greased 9x13" baking pan. Bake for 15 minutes, until center is set and edges are browned. Remove from the oven and let cool.
In a medium bowl, beat cream cheese, milk, sugar and vanilla until mixture is smooth. Add pudding mix and beat on low speed about a minute, until mixture begins to thicken.
Spread mixture over cooled crust and refrigerate for at least 2 hours. Just before serving, spoon cherry pie filling over the top. Keep refrigerated.
