Cherry Pecan Oatmeal Bars
1 14 ounce package caramels
1/2 cup cream
2 cups flour
2 cups quick cooking oats
1 1/2 cups light brown sugar, packed
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, melted
1 cup pecans, chopped
1 cup dried cherries
1 1/4 cups semisweet chocolate chips
Preheat oven to 350 degrees. Grease a 9x13" baking pan. In a saucepan over low heat, melt caramels with cream, stirring frequently until smooth. Set aside.
In a medium bowl, stir together flour, oats, brown sugar, baking soda and salt. Stir in butter. Press half the mixture into bottom of pan. Bake 10 minutes. Remove and cover crust with 1 cup pecans, 1/2 cup cherries and 1 cup chocolate chips.
Reserve 1/4 cup of the caramel mixture and drizzle remaining cramel mixture over ingredients in pan. Crumble remaining oat mixture and cherries evenly over top and pat down lightly. Bake an additional 15-20 minutes or until top is golden. Coo before cutting bars.
Melt remaining 1/4 cup chips. Drizzle cookies with reserved caramel mixture and melted chocolate chips. Sprinkle with extra pecans, if desired.
