Chesapeake Omelet Casserole

Serves 4 | Prep Time | Cook Time

Ingredients

8 oz. Crab Meat
6 eggs
1/2 cup heavy cream
2 teaspoons lemon juice
1/4 cup green onions, finely
1/4 cup chopped including tops
1/4 cup green peppers, diced
1/4 cup red peppers, diced
3 tablespoons butter
1/2 cup cheddar cheese


1. In a large mixing bowl, beat together eggs, cream, lemon juice, salt and pepper.


2. Add onions and peppers to egg mixture.


3. Fold in crab meat.


4. Pour mixture in to buttered oven-proof casserole or baking dish. Sprinkle top with cheese.


5. Bake at 375°F for 25 to 30 minutes or until egg is set.
