Chicken, Gorgonzola and Pear Salad
1/3 cup extra virgin olive oil
3 Tbsp. red wine vinegar
2 Tbsp. honey dijon mustard
Salt and Pepper
3 cups diced, cooked chicken breast
1/2 cup walnuts, toasted
1/2 cup crumbled gorgonzola
2 pears, halved, cored and sliced
16 oz. mixed salad greens
1) In bowl, whisk together olive oil, vinegar, mustard, salt and pepper to taste. Add chicken, walnuts and gorgonzola and toss lightly.
2) Place greens on a salad plate and arrange sliced pears along the top. Drizzle dressing over the salad.
