Chicken & Grape Salad
1 Tablespoons olive oil
4 chicken breast fillets
2 cups seedless green grapes,
2 cups green beans, topped,
2 red oak lettuces, leaves separated, washed, dried, large leaves torn
1 1/4 cup crumbed blue cheese
Honey walnut dressing
Heat the oil in a large frying pan over medium-high heat. Add the chicken and cook for 4-5 minutes each side or until golden and cooked through. Transfer to a plate and set aside for 5 minutes to rest. Thinly slice the chicken across the grain. Add the grapes to the pan and cook, tossing, over medium heat for 5 minutes or until heated through.
Meanwhile, cook beans in a saucepan of boiling water for 3 minutes or until bright green and tender crisp. Refresh under cold running water. Drain well.
Arrange the chicken, beans, grapes, lettuce and blue cheese on serving plates. Drizzle with the honey walnut dressing and serve immediately.
