Chicken & Turkey Sausage Chili

Why I Love This Recipe

This chili has a Tex Mex flavor to it so we serve it with Tostitos Restaurant Style Light tortilla chips and it's awesome! As if we'd expect anything else from Ms Ray.


Ingredients You'll Need

1/2 tbsp extra virgin olive oil
1 lb smoked turkey sausage, chunked (Hillshire Farm Lite)
2 lbs ground chicken
3 tbsp chili powder
1 tbsp ground cumin
1 onion, chopped
1 tbsp minced garlic (fresh or jar)
2 bell peppers, chopped (green, red, yellow or mix for color)
15 oz can red beans (Bush's Red Kidney Beans)
12 oz bottle of beer (Sam Adams Light)
28 oz can diced tomatoes (Hunt's - experiment w/flavored toms)
Salt/pepper to taste


Directions

Add EVOO to a big deep skillet over med high heat


Brown & crumble chicken, adding chili powder & cumin while cooking


Add sausage when chicken near done


Add onions, garlic, peppers, beans & tomatoes; bring to a slight boil


Add beer


Add water if needed (usually isn't)


Bring to a good boil for a few minutes


Reduce to simmer for 10 - 15 min


Salt/pepper to taste
