Ingredients You'll Need
1 lb boneless, skinless chicken breast, all visible fat removed
1 (14 1/2 oz) fat free chicken broth
1/4 c hot water
1/2 teaspoon dried thyme
2 cups instant rice
1 (14 1/2 oz) can asparagus, drained or french styled cut green beans
1 (10 3/4) can 98% fat free cream of chicken soup
Directions
In a large non stick skillet cook the chicken breast in the chicken broth and water over medium high heat for 3 minutes, covered
Turn the chicken over and cook an additional 3 minutes, covered
Remove chicken breast and cut the chicken into 1/4 inch thick strips and return them to the broth
Reduce the heat to very low. Stir in the thye and rice, making sure they are covered in broth
Gently stir in the drained asparagus and soup, stirring until well mixed. Do not cover. Continue cooking on low for 3 more mins to thicken the sauce
Turn off the heat and let cool for couple of minutes before serving
