Out of the Busy Peole's Low Fat Cookbook


  • 1 lb boneless, skinless chicken breast, all visible fat removed
  • 1 (14 1/2 oz) fat free chicken broth
  • 1/4 c hot water
  • 1/2 teaspoon dried thyme
  • 2 cups instant rice
  • 1 (14 1/2 oz) can asparagus, drained or french styled cut green beans
  • 1 (10 3/4) can 98% fat free cream of chicken soup


  • In a large non stick skillet cook the chicken breast in the chicken broth and water over medium high heat for 3 minutes, covered
  • Turn the chicken over and cook an additional 3 minutes, covered
  • Remove chicken breast and cut the chicken into 1/4 inch thick strips and return them to the broth
  • Reduce the heat to very low. Stir in the thye and rice, making sure they are covered in broth
  • Gently stir in the drained asparagus and soup, stirring until well mixed. Do not cover. Continue cooking on low for 3 more mins to thicken the sauce
  • Turn off the heat and let cool for couple of minutes before serving
