2-4 lb chicken, in breast strips
2 tbs vegetable oil
3 cloves of garlic *minced*
1 green pepper *chopped*
1 can diced tomatoes
1/2 tsp oregano
1/2 cup white win
2 cups mushrooms *quartered*
salt and pepper to taste
In a frying pan, without oil, put chicken in and cook on on both sides for 3-5 minutes or until browned on both sides.
Add the onion, garlic and green pepper until the veggies are slightly browned. Add tomatoes, oregano and wine. Cover and simmer for 30 minutes over meadium heat.
Add mushrooms and salt and pepper to taste. Simmer for 10 more minutes.
