Chicken Cobbler Casserole
6 tbsp melted butter, divided
4 c cubed baked pillsbury rolls
1/3 c grated cheese (I use a cheddar/colby mix)
2 tbsp chopped fresh parsley
2 med onions, sliced
1 (8oz) pack fresh mushrooms
1 c white wine
1 (10.75oz) can cream of mushroom soup
1/2 c drained and chopped roasted red pepper
2.5 c shredded cooked chicken
Toss 4 tbsp melted butter with first three ingredients; set aside.
Saute onions in remaining 2tbsp butter over med-high heat for 15min. Add mushrooms and saute 5 more min.
Stir in wine and next 3 ingredients; cook, stirring constantly, for 5 min or until bubbly. Spoon mixture into lightly greased 9" casserole dish; top evenly with bread mixture.
Bake at 400 for 15min.
