Chicken Curry

1 cup finely chopped onion
2 cloves finely chopped garlic
4 tablespoons butter
1 tablespoon plus 2 teaspoons curry powder, divided
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 medium fryer, cut up
2 teaspoons ground coriander
Pinch of cinnamon
Pinch of ground cloves
1 cup chicken stock
1 tablespoon tomato paste
Hot cooked rice

Saute onion and garlic in butter until light brown. Add 1 tablespoon curry powder, salt and cayenne pepper to pan.

Stir well and cook for 3 to 4 minutes.

Rub chicken with additional curry powder (to taste) and add it to the pan with the coriander, cinnamon and cloves.

Stir in the chicken stock and tomato paste.

Cover and simmer until chicken is tender, 30 to 45 minutes.

Serve hot with rice.
