  • 2 packages broccoli -- chopped
  • 2 skinless boneless chicken breast halves -- cooked and cubed
  • 1 can cream of chicken soup, condensed 98% fat free
  • 1/2 cup fat-free mayonnaise
  • 1 teaspoon lemon juice
  • 1/2 teaspoon curry powder
  • 4 ounces fat-free cheddar cheese -- grated
  • 1/2 cup bread crumbs
  • 1 tablespoon diet margarine


  • Cook and drain broccoli and arrange in a deep buttered dish. Take bread crumbs and
  • Margarine and mix together until it resembles graham crackers crumbs. Set aside. Place
  • chicken on top of broccoli. Combine rest of the ingredients, except the bread crumb
  • mixture, and pour the liquid mixture over the chicken. Sprinkle the bread crumb mixture
  • over the top and bake at 350F for 25 to 30 minutes. If it starts to brown too much, cover
  • with foil.
