2 pkgs. frozen broccoli
4 whole chicken breasts, cooked and cut up
2 cans cream of chicken soup
¼ c. mayonnaise
1 t. lemon juice
½ c. shredded sharp cheddar cheese
1 stick margarine, melted
1 ½ to 2 c. seasoned breadcrumbs
Cook broccoli; drain and lay in bottom of 9 x 13 pan.
Place chicken on top of broccoli.
Prepare sauce with soup, mayonnaise, lemon juice and cheddar cheese.
Pour sauce on top of chicken.
Mix margarine and breadcrumbs and sprinkle over sauce.
Cook 45 minutes at 350°.
May be made the day before.
My son does not like broccoli, so my friend, Lynn, puts cooked carrots in 1/2 of it when she has made it for us. It is a nice addition, and I usually eat some from both sides.
