1 Red Onion
175g Long grain Rice
Boil the rice for 10 minutes and set aside to cool.
Heat 1 tbsp Olive oil in wok. Chop onion finely and fry until browned on a medium heat
Chop chicken into small cubes and add to the onions, fry until cooked through.
Separately, Heat a tsp of olive oil in a hot frying pan. Beat the eggs and add salt and pepper. Add the eggs to the hot frying pan and leave still for 10 seconds. Using a fork, save the eggs.
Fry rice + eggs + soy sauce + peas + lots of pepper at a high heat
