Chicken El Paso
1/2 onion thinly sliced in bowl
Orange juice from one orange
pablano chile, julienned
Tabasco chile, julienned
prickly pear cactus
Marinate chicken breasts in orange juice for two hours. Take thorns off prickly pear and julienne like green beans. Saute cactus with red pepper and onion. Puree garlic and add to skillet. Remove from pan. Cook chicken breasts in clarified butter until done. Add cream to pan and reduce until the sauce sticks to the back of a spoon.
Add vegetables and spoon mixture over chicken.
