CHICKEN ENCHILADAS

Ingredients

  • 1 rotisserie chicken
  • 6 flour tortillas
  • 2 cans enchilada sauce
  • green onions
  • 1 can of re-fried beans
  • 1 bag Mexican cheese

Directions

  • Shred rotisserie chicken
  • Add chicken to large skillet
  • add 1 and 1/2 can of sauce and 1/4 bag of cheese
  • Fill each tortilla with mixture
  • Spread some re-fried beans on pan and place filled tortilla seam side down into pan
  • Pour remaining sauce on top
  • top with green onions and remaining cheese
  • bake at 375 for 30 min
