Chicken Fricassee

Ingredients

1/2 c. flour
2 Tbs. shortening
3 1/2 lbs. ready to cook stewing chicken, cut up
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. poultry seasoning
1 1/2 c. chicken broth
1 large onion, diced
1/2 c. celery, diced
1 can sliced mushrooms, fresh is desired


Dip the chicken pieces in flour. Preheat the frypan to 360 degrees. Melt 3 Tbs. shortening in frypan. Add the chicken and brown, turning as necessary. Remove the browned pieces. Spoon off the fat. Place chicken back into frypan. Add 1 1/2 c. broth, onion, celery and mushrooms. When the liquids begin to boil, turn the temperature dial to Medium Simmer. Cover. Simmer for 2 hours until large pieces are tender. Taste the gravy and add more seasonings, if desired. Sprinkle with finely chopped parsley. Serve with cooked noodles, rice, mashed potatoes or hot bread. Enjoy!
