Chicken Fried Chicken

Ingredients

1 1/2 lbs boneless, skinless chicken breast
1 cup and 2 tbsp flour
1/3 cup cornmeal
1 tsp paprika
1 tsp salt
1/2 tsp pepper
2 eggs beaten with milk
4 tbsp vegetable oil
1 1/4 cups chicken broth
1/4 cup cream or milk


Pound chicken to 1/4" thick.


Heat 2 tbsp oil in large pan


Dip chicken first in 1/2 cup flour, then in egg mixture and then in a mixture of 1/2 cup flour, the cornmeal, paprika, salt and pepper.


Place chicken in heated oil and brown on both sides. Then cover the skillet, lower the heat and cook about 15 minutes until the chicken is cooked thru.


Remove chicken and pour off all but 2 tbsp drippings. Add 2 tbsp flour and whisk 2 minutes. Whisk in broth and season with salt and pepper. Stir in cream and when gravy begins to bubble remove from heat and serve.


I make this with broccoli and garlic mashed potatoes.
