CHICKEN GAZPACHO SALAD

Ingredients

  • 14 oz fusilli pasta
  • 2 cups cubed cooked chicken
  • 1 small cucumber, chopped
  • 1 medium red or yellow bell pepper, chopped
  • 1 large tomato, chopped
  • 3/4 cup V-8
  • 1/4 cup lemon juice
  • 1/2 teaspoon ground pepper
  • 1/4 teaspoon salt
  • 1 clove garlic

Directions

  • Cook pasta, drain and mix in remaining ingredients and serve
