Cooked chicken breast(cubed or shredded)
Potatoes(we like red), poked with a fork and baked in the microwave until tender,cut in cubes
Canadian Bacon (chopped)
Salt, pepper and garlic powder
In a large skillet saute onion in olive oil until soft and then add canadian bacon and cook for a couple of minutes.
Toss chicken and potatoes in the skillet until heated through and season to taste.
Even the pickiest child in my house likes this recipe.
Variation: sprinkle with shredded FF cheddar cheese and broil until bubbly.
