4 x chicken breasts
2 garlic cloves
1 tbsp fresh parsley (or dried)
zest of one lemon
50g plain flour
2 eggs, beaten
Preheat the oven to 200C.
Beat the butter in a bowl with the crushed garlic, herbs, lemon zest and a pinch of salt and pepper. Divide into four pieces, roll into sausage shapes and chill until firm.
Bash each breast GENTLY between sheets of parchment paper until flattened to an even thickness. Place a butter 'sausage' on each chicken piece and roll up.
Place the flour, egg and breadcrumbs in separate, shallow bowls. Dip each roll into the flour, then the egg and finally the breadcrumbs.
Oil a baking tray generously. Put each chicken roll on the tray, rolling each one over in the oil as you go.
Bake in the oven for 25 minutes, until golden brown.
