Chicken Mole--Low Carb
2 Tbsp vegetable oil
4 lbs chicken breast
1 clove garlic
1 cup chicken broth
2 Tbsp baking cocoa (use Wondercocoa)
2 Tbsp peanut butter (use sugar free peanut butter)
Heat the oil in a skillet. Cut the chicken into pieces and brown for about 5
minutes, stirring. Put chicken on a plate and dice the onion and garlic. Brown
for 3 minutes. Add in salsa, chicken broth, cocoa and peanut butter. When it
boils, reduce to simmer and add in chicken. Cook for about 25 minutes
