CHICKEN PHO

INGREDIENTS
- 1 whole chicken
- 1 teaspoon peppercorns
- salt, to taste
- 2 sticks cinnamon
- 1 cup cilantro, freshly chopped
- 8 ounces rice noodles
- 1 lime cut in half, each half quartered
- thai basil
- 1 medium sweet onion, very thinly sliced
- bean sprouts
DIRECTIONS
Place the chicken in a large pot and cover with cold water. Add about a teaspoon of kosher salt and bring to a simmer. Toss in cinnamon sticks and peppercorns. Simmer for 90 minutes. Remove chicken to a cutting board. Remove and discard chicken skin and bones. Remove cinnamon sticks and peppercorns from pot, discard. Break chicken into bite-sized pieces and return to the pot. Stir in the noodles, return to a simmer and cook until tender. Turn off heat, add cilantro and onion. Serve with basil, lime and sprouts on the side.
