Chicken Quarter Stir Fry
5 sliced chicken leg quarters with skin
2 plum tomatoes, sliced into wedges
2 celery stalks, sliced into 2-3 in wedges
4 jalapeno peppers, sliced into wedges
1 small onion, sliced into wedges
2 small potatoes sliced into wedges
3 medium carrots (peeled if preffered but not necessary)
about 1.5 tbs of salt
1/2 tsp garlic
1/2 tsp pepper
NOTE: The wedges should be more on the thin side.
In preheat electric skillet 400 degrees for a few minutes.
Rinse leg quarters and add poultry seasoning to both sides of the leg quarters.
Place leg quarters in skillet skin side down until top of leg quarters are no longer pinkish.
Turn over the leg quarters.
Reduce heat to 350 degrees.
Let stand for a few minutes and turn twice until skin begins to show signs of crispness.
Add all chopped up veggies.
Wait for veggies to begin to cook before adding salt, garlic, and pepper.
Mix a few times ensuring veggies reach the bottom of the skillet and seasonings get distributed evenly.
Once veggies are cooked, your meal is ready to serve!
Another option is to add some barbecue sauce. YUM
Pairs Well With
Like alot of my cooking, this meal was like an expirament. I didnt follow any recipe per say, just opened up my fridge and began picking some ingredients and went from there.
