Why I Love This Recipe


Ingredients You'll Need

2 medium heads iceberg lettuce, shredded
1 cup celery, chopped
1¾ cups chow mein noodles
1¾ pounds chicken breasts (2 whole), sliced into 2-inch strips
¾ cup sliced water chestnuts
1¾ cups snow peas, each cut into 3 diagonal pieces
¼ cup sliced almonds
10 radishes, sliced thin
3 green onions, chopped fine

Curry Dressing: (Combine all ingredients in a bowl, except mayonnaise, and stir until brown sugar dissolves. Add mayonnaise and whisk until smooth.)
3 tablespoons dry white wine
2 tablespoons each of unsweetened pineapple juice, lemon juice, and light brown sugar
1½ tablespoons curry powder
2 teaspoons soy sauce
1 teaspoon onion powder
Pinch of garlic powder
2 cups mayonnaise


Directions

1. Combine lettuce and celery in a very large bowl; spread chow mein noodles over top of lettuce.


3. Heat skillet on medium-high; add chicken strips and sauté until lightly browned, about 2 minutes. Add water chestnuts and snow peas; cook for 1 minute. Remove and put over salad. Pour 2 cups curry dressing over salad and toss well.


3. Garnish with almonds, radishes, and green onions;
