Chicken Satay with Indonesian Peanut Sauce
1/2 tsp cumin
1/4 tsp fennel
1/2 tsp corriander
1/8 cup green onions, chopped
1 large garlic clove, minced
1/2 tsp lemon grass, minced
1/8 cup macademia nuts, chopped fine
1 tsp turmeric
4 Chicken breasts, diced in 1/2 inch cubes.
20 wood skewers soaked in water for 2 hours.
Mix ingredients for marinade in a large bowl and add chicken.
Let chill for 4 hours then pierce chicken with wet wood skewer.
BBQ or broil until golden brown but do not burn.
