Chicken Scampi

Serves 6 | Prep Time | Cook Time

Ingredients

1/2 stick butter
1/4 cup olive oil
1/4 cup shallots, chopped (or sub white onions)
1 tablespoon minced garlic
Juice of one lemon
6 chicken breasts, boned and skinned, cut into 1/2-inch pieces
1/2 teaspoon freshly ground black pepper
1/4 cup fresh parsley, minced


Instructions: Heat the butter and olive oil together in a skillet and


sauté the shallots for several minutes. Add the garlic and sauté another


minute or so. Add the lemon juice, chicken, salt, pepper and parsley.



Continue cooking, stirring frequently for 5-8 minutes until the chicken is


thoroughly cooked. Serves 6
