  • 1/2 stick butter
  • 1/4 cup olive oil
  • 1/4 cup shallots, chopped (or sub white onions)
  • 1 tablespoon minced garlic
  • Juice of one lemon
  • 6 chicken breasts, boned and skinned, cut into 1/2-inch pieces
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup fresh parsley, minced


  • Instructions: Heat the butter and olive oil together in a skillet and
  • sauté the shallots for several minutes. Add the garlic and sauté another
  • minute or so. Add the lemon juice, chicken, salt, pepper and parsley.
  • Continue cooking, stirring frequently for 5-8 minutes until the chicken is
  • thoroughly cooked. Serves 6
