CHICKEN SPINACH STIR FRY

- 1.5 Chicken Breasts
- 2 Tbsp Low Sodium Soy Sauce
- 2 Tbsp Olive oil
- 1 Garlic Clove, minced
- 2 Tbsp Honey
- 1/2 bag of baby spinach
- 1/4 Tsp Ground Black pepper
- Heat olive oil in a wok and then add minced garlic and let cook for about a minute. Add in the soy sauce and ground pepper. Add the chicken and cook through, so that it is no longer pink in the middle of the largest pieces. While the chicken is cooking, drizzle the honey over the pieces and stir to mix the sauce over all the chicken. Finally, add the spinach and cook to the desired amount. I didn't have time to cook any rice, but I think it would go really well over brown rice.
NotesMade this up last night after eating something similar at a restaurant in NYC. The proportions are not exact, so feel free to experiment! That's how I made this, after all!
