Chicken Stock

INGREDIENTS

  • 1 whole chicken carcass
  • 2 quarts water
  • 1 carrot, coarsely chopped
  • 1 celery stalk
  • 1 small onion, quartered
  • 1 bay leaf
  • 1/4 teaspoon dried basil
  • 6 whole peppercorns
  • 1/4 cup fresh parsley, chopped

DIRECTIONS

Break up carcass. Add giblets, if available. Combine all ingredients in a large soup kettle. Bring to a boil and simmer over low heat for 1-1/2 to 2 hours. Strain.
