Chicken Taco Noodle
5 to 6 drum sticks
1 package of taco seasoning
14 oz tomato sauce
1 pkg of frozen corn
1 can of black beans
2 gloves of garlic (chopped)
1 small onion (chopped)
1/3 package of chili powder
1 tablespoon of olive oil
1 cup water
salt to taste
In a large covered pot, combine water and salt to bring chicken breasts to a boil (45 minutes).
When cooked, set chicken aside and let cool.
Next, heat oil in a skillet and add onion and garlic, allowing them to caramelize.
Add the other ingredients, including chicken, to the skillet and let it all simmer on medium for about an hour.
Next, boil noodles as directed on package and drain.
When chicken mixture is done, pour over noodles and enjoy!
