Chicken Vodka Pomodoro
4 chicken breast halves
2 T olive oil
1/4 cup vodka
1/2 cup chicken broth
2 T lemon juice
1/2 cup tomatoes, seeded and chopped
1 clove garlic, minced
2 T cream
1/3 cup scallions
Pound chicken breasts until 1/2 inch thick. Season with salt and pepper, then dust with flour.
Saute cutlets in oil for 2-3 minutes per side. Remove cutlets and pan.
Deglaze with vodka and cook until vodka is gone. Add broth and lemon juice.
Return cutlets to pan and cook for 1-4 minutes. Remove cutlets again.
Finish sauce with tomatoes, garlic, and cream. Pour over cutlets and garnish with scallions. Serve with bread and pasta.
