CHICKEN AND DUMPLING CASSEROLE

Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1/2 cup all-purpose flour
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1/2 teaspoon pepper
  • 4 cups chicken broth
  • 1 package frozen green peas
  • 4 cups cooked chicken, cubed

Directions

  • Add onion, celery, garlic and butter in a Dutch oven sauce pan and cook veggies until tender. Add the flour, sugar, salt,dried basil and pepper, stirring to incorporate all together. Add the chicken broth and bring to a boil. Add peas and cook 5 minutes. Stir in cooked chicken to heat through; then pour into greased 9 x 13 pan. Meanwhile make the Dumplings.

Notes

This is one of my Mom's recipes and it was so good I ask her to share. My husband doesn't care for peas, but will eat them in this meal.
