Chicken and Quinoa - Healthy & Delicious
1Tbl. Olive oil
1Ã‚Â½ cups shallots, chopped
2 ribs celery, chopped (about 1 1/3 cups)
2 carrots, chopped (about 1 cup)
4 cloves garlic, minced
Ã‚Â½ cup fresh parsley, minced
1 pound skinless, boneless chicken breasts, cut into 1Ã¢â‚¬Â chunks
1 tsp. Dried thyme (or 1 Tbl. Fresh)
salt and fresh ground pepper
2 cups chicken broth
Ã‚Â½ cup dry sherry
Ã‚Â¾ cup quinoa, rinsed and drained
Heat oil in a large deep skillet. Add shallots, celery and carrots and sautÃƒÂ© until shallots are translucent.
Stir in garlic and parsley, cook one minute.
Push vegetables to the side, increase heat to high.
Season chicken with thyme, salt and pepper. Add to skillet and cook, stirring constantly, until lightly colored.
Add broth and sherry, bring to a boil over high heat.
Reduce heat to low, cover and simmer 10 minutes.
Stir in quinoa, cook 15 minutes, remove from heat and let stand 5 minutes. DonÃ¢â‚¬â„¢t overcook or it gets mushy
