Chicken and Zucchini
I Tbsp olive oil
4 boneless/skinless chicken breast halves
Salt and pepper
Creole or Cajun seasoning
2-3 Tbsp flour
1/2 cup chicken broth
4 medium zucchini squash, thinly sliced
4-6 plum tomatoes, sliced
6 oz shedded mozzarella cheese
In a large skillet over medium heat, heat olive oil.
Sprinkle chicken with salt, pepper and creole seasoning; then dust lightly with flour.
Brown chicken in hot skillet on both sides.
Add chicken broth.
Cover and simmer for about 10 minutes.
Add zucchini; cover and simmer for 5 minutes.
Add tomatoes and sprinkle with salt and pepper to taste.
Simmer uncovered for 10 minutes or until chicken is thoroughly done.
Top with cheese.
Cover and simmer about 1 minute.
