Chicken meatballs in a coconut curry sauce

Why I Love This Recipe

Usually meatball recipes are made with beef or lamb. Try this alternative, the chicken works really well with the coconut. Make extra and freeze half.


Ingredients You'll Need

For the meatballs
500g minced chicken
½ tsp salt
½ tsp garam masala
½ tsp crushed garlic
½ tsp crushed ginger
1 slice of bread made into breadcrumbs
1 tbsp chopped coriander
1-2 green chillies, finely chopped, deseeded if preferred

For the curry
3 tbsp sunflower oil
2 medium onions
1 tsp coriander powder
½ tsp cumin powder
½ tsp chilli powder
½ tsp turmeric
1 tsp finely chopped garlic
1 tsp finely chopped ginger
½ cans chopped tomatoes
½ - 1 can coconut milk
Salt to taste
Chopped fresh coriander to garnish


Directions

1. Mix all the meatball ingredients together. Dampen your hands and form the mixture into about 20-25 balls.


2. Heat the oil in a large saucepan and fry the onions until golden brown.


3. Add all the ground spices, garlic, ginger and tomatoes, and cook on a gentle heat for about 10 minutes or until spices have cooked out. Add the coconut milk and mix in.


4. Carefully add the uncooked meatballs and cook gently in the sauce for about 25 minutes. Do not stir for the first 10 minutes.


5. Season and add coriander.
