Chicken salad with a twist

Serves 12 | Prep Time 20 | Cook Time 15


1 lb rotini pasta
1/2 c sesame seeds
1/2 c canola oil
2/3 c soy sauce
2/3 c white wine vinegar
6 t sugar
1t salt
1/2 t pepper
4 c shredded chicken breast (about 1 rotisserie costco chicken)
1/2 c chopped fresh parsley
8 c spinach - torn into bite size pieces

Cook pasta in salted water, drain and set aside

Toast sesame seeds in 1/2 c oil and let cool

Once cooled, mix in with soy sauce, vinegar, sugar, salt, and pepper.

Mix pasta and chicken together

Pour liquid mix over pasta and chicken

Let cool in fridge for 2-12 house

Add parsley and spinach to chicken and serve

I am always looking for a good pasta salad and this one seems to actually get better the next day!
