CHICKEN SALAD WITH A TWIST

Ingredients

  • 1 lb rotini pasta
  • 1/2 c sesame seeds
  • 1/2 c canola oil
  • 2/3 c soy sauce
  • 2/3 c white wine vinegar
  • 6 t sugar
  • 1t salt
  • 1/2 t pepper
  • 4 c shredded chicken breast (about 1 rotisserie costco chicken)
  • 1/2 c chopped fresh parsley
  • 8 c spinach - torn into bite size pieces

Directions

  • Cook pasta in salted water, drain and set aside
  • Toast sesame seeds in 1/2 c oil and let cool
  • Once cooled, mix in with soy sauce, vinegar, sugar, salt, and pepper.
  • Mix pasta and chicken together
  • Pour liquid mix over pasta and chicken
  • Let cool in fridge for 2-12 house
  • Add parsley and spinach to chicken and serve

Notes

I am always looking for a good pasta salad and this one seems to actually get better the next day!
