Chicken with Pears and Honey Vinegar
2 Tablespoons butter
1 1/4 pound boneless, skinless chicken breasts; flattened slightly if very thick
2 large ripe Bartlett pears; peeled, cored and sliced into eighths
1/4 cup honey
3 Tablespoons white balsamic vinegar
2 Tablespoons fresh basil; chopped
Salt and pepper to taste
Melt butter in a medium skillet over medium-high heat.
Season chicken breasts with salt and pepper.
Cook for five minutes per side or until chicken is golden brown and cooked t 165 Degrees
Remove from skillet and keep warm.
In same skillet, cook pears, honey, and vinegar over medium heat
Stir frequently until pears are warmed through and sauce is thickened and syrupy.
Return chicken to skillet.
Cook one minute turning chicken once to coat with sauce.
Sprinkle with basil.
