Chicken with White Sauce

Serves 2 | Prep Time 10 | Cook Time 60

Ingredients

2 chicken breasts, cut into bite-size pieces
1 bunch scallions
1 bunch mushrooms
1/8 cup sherry
1 cup beef or chicken stock
butter
2 Tbsp. flour
1/2 cup cream
salt pepper


Chicken breasts.. I cut them into bite size pieces but you don’t have to


Panfry them in butter til brown on all sides


Remove and set aside


In same pan, add smore butter if needed, then scallions and mushrooms


Brown them and then return the chicken to the pan


Deglaze bottom of pan with some sherry and then add a cup or two of stock


Simmer till chicken is nice and soft.


Meanwhile, in another small skillet, add tablespoon or so of butter and same of flour.. melt these together which makes a rue, or paste


Then slowly add cream, whisking to make a thick white sauce…


Pour over chicken and enjoy!
