Chile Rellenos Bites

Ingredients

2 4oz cans whole green chilies

1lb monterey jack cheese, grated

2 eggs

1 cup sour cream

1/4 tsp salt

1/4 tsp pepper


Remove seeds from peppers and cut into flat, wide strips. Place 1/2, in a single layer, in a greased 8x8" baking dish. Sprinkle with 1/2 of the cheese. Place remaining chilies over the cheese, then top with remaining cheese. Beat eggs until frothy. Add sour cream, salt, and pepper. Mix well. Pour over chili/cheese layers. Bake uncovered at 350 for 45 minutes, until set. Cut into 1" squares and serve hot. Makes approx 64 pieces.
