1 tablespoon paprika
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon ground coriander
1/4 to 1/2 teaspoon ground black pepper
1/4 to 1/2 teaspoon ground red pepper
Stir together the paprika, cumin, chili powder, salt, coriander, black pepper, and red pepper in a small bowl.
To use, sprinkle mixture evenly over meat; rub in with your fingers. Store in a tightly covered container. Makes about 6 teaspoons (enough for 3 pounds of beef, pork, or chicken).
