CHILLED AVOCADO SOUP

Chilled Avocado Soup

When it's too hot to cook, this goes together in about five minutes and brings weary wilted workers back to life.

 


INGREDIENTS

  • 3 very ripe avocados
  • 2 cloves garlic, minced
  • pinch salt
  • 1 pint lowfat buttermilk
  • half medium sized cucumber, peeled and diced
  • handful of cilantro, torn
  • squirt of lime juice

DIRECTIONS

DIRECTIONS:


Scoop avocado into large bowl and mash with garlic, salt, and lime juice. Whisk in buttermilk until smooth. Stir in cilantro and diced cucumber. Chill for two hours to allow flavors to meld. Serves 4-6.
