Chinese Cabbage Salad
1 (3 ounce) package chicken flavored ramen noodles, crushed
1/4 cup butter or margarine
1/2 cup sesame seeds
1/2 cup sliced almonds
1 head napa cabbage, thinly sliced
6 scallions, sliced
1/4 cup vegetable oil
1/4 cup rice wine vinegar
1 tablespoon soy sauce
1 1/2 teaspoons sesame oil or to taste
2 tablespoons sugar
1/2 teaspoon ground ginger
1 small can pineapple tidbits, and/or mandarin oranges, drained
and/or 2 cups diced cooked chicken to make a main dish salad.
Melt butter or margarine in a large skillet over medium heat. Crush noodles and add to skillet. Stir and brown over medium heat. Add sesame seeds and almonds. Brown gently, stirring. Sprinkle mixture with seasoning packet from noodles.
Set aside to cool.
Place cabbage and green onions in large bowl. Combine the oil, sugar, soy sauce, vinegar, sesame seed oil and ginger in a glass measuring cup or bowl.
Whisk to combine.
Pour on salad, adjusting amount to personal taste.
Add optional ingredients, if desired.
Chill for 30 minutes.
Stir in noodle mixture just prior to serving to maintain the crunch
