Chipotle Chicken Wraps
7 boneless skinned chicken breasts
2 chipotle pods (rehydrated)
7 strips of bacon
2 cups of heavy cream
2 tablespoons of butter
1 teaspoon all purpose flour
salt and pepper to taste
Preheat oven to 350°F.
Wrap each chicken in a strip of bacon and sauté in butter for one minute per side.
Place in a glass-baking pan, and cook in oven for 20 minutes.
Drain off grease
In a mixing bowl, combine cream, chipotle pods, flour, salt and pepper to taste.
Dust mixture over chicken breasts and return to oven for an extra 15 minutes or until the sauce is thickened and breasts are cooked through.
