Chive-Ham Brunch Bake

This recipe is from Taste of Home. It tastes especially good when tomatoes are in season.

INGREDIENTS

  • 1/2 c. chopped onion
  • 1 T. butter
  • 5 oz. ham, cubed
  • 1 medium tomato, chopped
  • 2 c. biscuit/baking mix
  • 1/2 c. water
  • 1 c. shredded Swiss or cheddar cheese
  • 2 eggs
  • 1/4 c. milk
  • 1/4 t. dill weed
  • 1/4 t. salt
  • 1/8 t. pepper
  • 3 T. minced chives

DIRECTIONS

Saute onion in butter until tender. Stir in ham & tomato; set aside. In a bowl, combine biscuit mix & water; mix well. Press onto the bottom and a half inch up the sides of a greased 9 x 13 baking dish.


Spread ham mixture over crust; sprinkle with cheese. In a bowl, beat eggs, milk, dill, salt and pepper; pour over cheese. Sprinkle with chives.


Bake, uncovered, at 350 for 25-30 minutes or until a knife inserted near the center comes out clean.
