Choc Chip Peanut Cookies
1 1/2 cups plain flour
1/2 cup old fashioned rolled oats
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
3/4 cup tightly packed light brown sugar
1/4 cup margarine
1 cup peanut butter spread
1/2 medium banana, mashed (about 1/4 cup)
1 large egg
1 teaspoon vanilla essence
1 cup chocolate chips
Preheat oven to 190C.
Spray 2 large baking trays with vegetable oil cooking spray.
In a small bowl, combine flour, oats, baking powder and cinnamon.
In a mixing bowl, beat sugar and margarine until light and fluffy, using an electric mixer set on low and increasing to high.
Beat in peanut butter, banana, egg and vanilla. Gradually beat in flour mixture at low speed until combined. Stir in chocolate chips.
Drop dough by heaped teaspoonfuls, 4cm apart, onto baking trays; flatten slightly.
Bake for 12 to 15 minutes per batch, until golden. Place trays on wire cooling racks; cool slightly. Transfer cookies to rack and cool completely.
Pairs Well With
Substitute raisins for the chocolate chips
To clean beaters quickly, wipe off food, then soak beaters in hot soapy water - the grease comes off more easily. Rinse and dry well.
