Chocolate Amaretto Cheesecake Heaven
1-1/2 cups graham cracker crumbs
1 ounce chocolate, melted
6 tablespoons melted butter or margarine
2 tablespoons sugar
6 ounces semisweet chocolate
4 ounces almond paste (marzipan)
1/3 cup Amaretto liqueur
3 pkgs. (8 oz. each) cream cheese, room temperature
1/2 cup sugar
4 large eggs
1/2 cup whipping cream
For crust: Crush crackers, stir in sugar. Melt unsweetened chocolate and butter or margarine: add to crumbs; mix well. Press into bottom of 9 or 10-inch springform pan. Preheat oven to 350ºF.
For filling: Melt chocolate and set aside. Cut almond paste into small pieces and thoroughly mix in Amaretto in food processor or blender. Set aside.
In large mixer bowl, beat cream cheese until smooth. Add sugar, almond paste and chocolate, beating between each addition. Add eggs one at a time, beating on low speed only until each is mixed into the cream cheese mixture. Add cream; beat just until smooth. Pour batter over crust in prepared pan.
Bake at 350ºF for 50 minutes. Cake won't seem to be done - the middle jiggles a lot but it firms up in the refrigerator. Refrigerate at least 5 hours.
