Chocolate Amaretto Cheesecake
1/4 cup chocolate wafer crumbs (see note)
vegetable cooking spray
1 cup sugar
1-1/2 cups Neufchatel cheese
1 cup low-fat cottage cheese
6 tablespoons unsweetened cocoa
1/4 cup all-purpose flour
1/4 cup Amaretto
1/2 teaspoon salt
1/4 cup egg substitute
1 teaspoon vanilla extract
3 tablespoons mini semisweet chocolate morsels
Spread the chocolate wafer crumbs evenly in the bottom of an 8-inch springform pan coated with cooking spray. Set aside.
Combine the sugar, cheeses, cocoa, flour, and Amaretto in the bowl of a blender or food processor. Process until smooth. Add the salt, egg substitute, and vanilla; blend only until combined. Fold in the chocolate
morsels. Pour the mixture over crumbs in the pan.
Bake at 300ºF for 50-60 minutes, or until the cheese cake is set. Let the cake cool before removing from the pan. Chill at least 8 hours before serving.
