Chocolate Amaretto Cheesecake
Six 2 1/2" chocolate graham wafers, made into crumbs
2 1/3 cups of part-skim ricotta cheese
4 ounces of low fat cream cheese
1/2 cup of sugar
1/4 cup of unsweetened cocoa powder
3 tbsp of flour
2 tbsp of Amaretto
1 tsp of vanilla
2 tbsp of semisweet chocolate chips
Preheat the oven to 300. Spray an 8" springform pan with nonstick cooking spray. Sprinkle the cracker crumbes evenly over the bottom of the pan.
In a blender or a food processor, puree the ricotta and cream cheeses, the sugar, cocoa, egg, flour, liqueur, and vanilla; stir in the chocolate chips.
Pour the mixture over the crumbs. Bake for approx 1 1/2 hours. Cool completely on a wire rack. Refrigerate, covered, for at least three hours.
