Chocolate Banana Rum Cheesecake
6 oz plain chocolate biscuits
3 oz butter
6 oz cream cheese
2/3 cup soft brown sugar
3/4 cup mashed banana
2 tablespoons corn flour
1 tablespoon rum
2 tablespoons sour cream
2-1/2 oz dark cooking chocolate, melted
1 banana for decoration
Line a 9-in square tin with foil. Brush base and sides with oil.
Process biscuits until finely crushed and add with butter and press into tin base. Refrigerate Preheat oven to 350ºF. With electric beater, beat cheese until light and creamy. Add sugar, banana and corn flour, beat until smooth. Add eggs, one at a time, beating well after each addition. Add rum, sour cream and cooled chocolate, Beat until well combined.
Pour mixture into tin and bake 45 minutes or until just set. Cool, refrigerate until firm. Serve cut into squares, with whipped cream and sliced banana.
